Ingredients:

  • For the batter:
    • 1 cup gram flour (besan)
    • 3/4 cup water
    • 1 tbsp semolina (sooji/rava) (optional)
    • 1 tsp sugar
    • 1 tbsp lemon juice
    • 1 tsp salt
    • 1 tsp green chilli-ginger paste (optional)
    • 1/4 cup curd (yogurt) (optional)
    • 3/4 tsp baking soda (Eno fruit salt)
    • 1 tbsp oil
  • For the tempering:
    • 2 tbsp neutral oil (peanut oil preferred)
    • ⅓ cup water
    • 1 tsp mustard seeds
    • 1 tsp cumin seeds (optional)
    • 2 tsp white sesame seeds
    • 10-12 curry leaves
    • 1 tsp chopped green chilies (optional)
    • 2 tsp sugar (or to taste)
    • Chopped coriander leaves
    • Grated coconut (for garnish)

Instructions:

  1. Make the batter: In a large bowl, whisk together gram flour, semolina (if using), water, sugar, lemon juice, salt, green chilli-ginger paste (if using), and curd (if using) until you get a smooth and lump-free batter. The batter should be thick but pourable. If it’s too thick, add a little more water by tablespoons until you get the desired consistency.Besan Dhokla Recipe in hindi
  2. Ferment the batter: Cover the bowl and let the batter rest for at least 30 minutes. This allows the fermentation process to activate the eno and create a fluffy texture.
  3. Prepare for steaming: Grease a baking tray or thali with oil. You can also use a steamer with a greased plate.
  4. Whisk and steam: Just before steaming, add eno fruit salt (baking soda) to the batter and whisk it vigorously for about a minute in one direction (clockwise or anticlockwise) until the batter becomes frothy and light. Immediately pour the batter into the greased tray.
  5. Steam the dhokla: Place the tray in a steamer with enough water in the bottom pan. Steam the dhokla for 15-20 minutes on medium heat. A toothpick inserted into the center should come out clean when the dhokla is cooked through.
  6. Make the tempering: While the dhokla steams, heat oil in a pan over medium heat. Add mustard seeds, cumin seeds (if using), sesame seeds, and curry leaves. Let them splutter for a few seconds.
  7. Add tempering flavors: Add chopped green chilies (if using), water, and sugar to the pan. Bring it to a boil and then simmer for a minute.
  8. Temper the dhokla: Once the dhokla is cooked, take it out of the steamer and let it cool slightly. Pour half of the tempering over the dhokla. Let it sit for a few minutes to allow the dhokla to absorb the flavors.Besan Dhokla Recipe in hindi

Tips:

  • Use a whisk to beat the batter for a fluffy texture.
  • Don’t overcook the dhokla, or it will become hard.
  • Adjust the amount of green chilies according to your spice preference.
  • For a richer flavor, you can add a tablespoon of grated peanuts to the batter.
  • Dhokla tastes best when served fresh, but it can be stored in the refrigerator for up to 2 days.
